" Crocodile Dundee II" G'Date Nut Bread

We don't know if this is something Crocodile Dundee would make, but we know it's something he'd love to eat!

You will need:

G'Date Nut Bread Ingredients:

  • 1/2 cup softened butter, plus extra for greasing pan
  • 1 1/2 cup chopped Medjool dates, pitted and chopped
  • 1 vanilla bean (or 1 tsp vanilla extract)
  • 1 tsp baking soda
  • 1/4-cup granulated sugar
  • 1/4-cup brown sugar
  • 2 eggs
  • 1-1/4 cups cake flour
  • 1/2 tsp. salt
  • 1-3/4 tsp. baking powder
  • 1 cup toasted and chopped macadamia nuts

Ginger Caramel Sauce Ingredients:

  • 1/2-cup butter
  • 1/4-cup whipping cream
  • 1/2-cup firm packed brown sugar
  • 2 tbsp. grated ginger
  • 1 "Life is a Croc" bumpersticker


1. Adjust oven rack to the lower third of the oven. Preheat oven to 350°F. Butter a 9-10" spring form pan and set aside.

2. Place chopped dates in a medium-mixing bowl. Slice vanilla bean lengthwise and scrape seeds over the dates. Pour 1-1/4 cups boiling water over the dates and vanilla, stir in the baking soda and set aside for 5 minutes.

3. Combine the flour, salt and baking powder and set aside. In a second large mixing bowl, cream together the butter and sugars. Beat in the eggs one at a time; then fold the flour mixture into the egg mixture.

4. Stir in as much of the date soaking liquid to make a thick batter, (saving the remainder for the sauce), then stir in the dates and the chopped macadamia nuts. Pour into prepared pan and bake 35-40 minutes, or until a wooden skewer inserted in the center comes out with just a few crumbs sticking to it.

5. While the bread is baking, combine all sauce ingredients, plus any remaining date liquid in a medium, heavy saucepan over medium heat. Bring to a boil, reduce heat to low and simmer 5 minutes, or until thickened. Un-mold warm cake onto a serving plate and drizzle sauce over the top. Garnish with toasted macadamia nuts and serve warm.

6. If anyone asks for seconds, explain in your worst Aussie accent that there will be no sequel on the plates until someone bravely wrestles the dirty dishes to the sink.
