" Joe Versus the Volcano" Really Sloppy Joe's

Sure, you could eat the stuff out of the can, but for a real sloppy joe taste, you have to do a little of the work yourself. So roll up your sleeves and dig in. You'll thank us for it later.

You will need:

  • 1-1/2 lbs. pork loin, cut into 2" cubes
  • 1-1/2 lbs. lean beef, cut into 2" cubes
  • 4 tablespoons peanut oil
  • 3 white onions (1 quartered, 2 finely diced)
  • 2 1/2 lbs. very ripe tomatoes cut into quarters
  • 3 tablespoons tomato paste
  • 6 cloves garlic, peeled and smashed
  • 4 tablespoons cider vinegar
  • 4 tablespoons brown sugar
  • 1 whole cinnamon stick
  • 2 teaspoons marjoram
  • 1/2 cup golden raisins
  • 1/2 cup roughly chopped almonds
  • hamburger buns or fresh rolls of choice
  • salt and freshly ground black pepper, to taste
  • 1 full body bib

Directions:

1. Place the meat, the quartered onion and a teaspoon of salt in a saucepan. Cover with water and bring to a low simmer. Cook, uncovered until the meat is tender, about 30 minutes.

2. Remove meat and chop or shred into small pieces. Set aside. Reserve 1 cup of the meat broth.

3. In a medium saucepan, heat half of the oil over medium heat. Add remaining onions, a pinch of salt and cook, stirring often until well browned, but not burnt.

4. While the onions cook, puree the tomatoes, garlic, vinegar, sugar, and meat broth in a blender.

5. Pour the pureed tomato mixture into the pan with the onions, then add the cinnamon stick, marjoram, and raisins and raise the temperature to medium high. When the mixture comes to a boil, reduce heat to low and simmer until thickened, stirring often.

6. Heat the remaining oil in a large skillet over medium-high heat; add the chopped meat, almonds, and a pinch of salt. Saute a few minutes before adding the tomato mixture. Season the mixture to taste with salt and pepper, reduce heat and simmer 10 minutes.

7. Pile high onto toasted buns and eat as though your life depended on it. Then toss your dishes into the nearest volcano.
