" Father of the Bride II" Dainty Little Martin Shortbreads

These little pastries are as rich as the whole cast of this movie, combined! With a tart raspberry filling and a variety of decadent toppings, they are a true guilty pleasure (just like Martin Short).

Ingredients: For the filling:

  • 2 cups frozen raspberries
  • 1 cup sugar
  • 2 tablespoons lemon juice

For the Shortbreads:

  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla
  • 1 cup softened butter
  • 2 cups flour
  • 1/4 teaspoon salt

For the toppings:

  • coarse sugar
  • powdered sugar
  • chopped pecans or almonds
  • melted bittersweet chocolate
  • 2 ripe plums or nectarines, thinly sliced
  • 1 accent (completely unidentifiable)

Directions: 1. Combine the raspberries, sugar, and lemon juice in a medium, heavy saucepan. Bring the mixture to boil, reduce heat and simmer 1 hour or until thickened.

2. Preheat oven to 350°F.

3. Cream the butter and sugar well. Beat in the vanilla; sift the flour into the butter mixture and blend with a fork until a soft dough is formed. Shape into a disc; wrap with plastic and refrigerate 20 minutes.

4. Line an ungreased baking sheet with parchment and pat the dough into a 1/2" thick rectangle over the parchment. Prick the dough all over with the tines of a fork and lightly score to form 12-16 cookies. Another option would be to roll the dough out and use cookie cutters to cut into shapes of choice.

5. Arrange the plum and nectarine slices decoratively over the unbaked dough and sprinkle with chopped nuts or coarse sugar as desired. Press the toppings lightly into the dough with fingertips. As an alternative, leave the dough undecorated and use raspberry filling, chocolate, or powdered sugar to decorate after baking.

6. Bake until the edges just begin to turn golden brown, about 20 minutes. Break along the scored edges into individual cookies while warm. Cool 15 minutes, then finish decorating with raspberry filling, melted chocolate, or powdered sugar.
