" Outrageous Fortune" Misfortune Cookies

Flavored with almonds and orange, these fortune cookies will bring a smile to your lips (until you read what's in store for you).

You will need:

  • 1/2 cup flour
  • 2 tablespoons very finely ground toasted almonds
  • 1/4 cup sugar
  • 1 pinch salt
  • 5 tablespoons soybean oil
  • 2 egg whites, plus 1 more if needed
  • 1/4 teaspoon very finely grated orange rind
  • 2 teaspoons vanilla extract or your choice of flavored extracts (lemon, orange, coffee, etc.)
  • 16 outrageous fortunes, typed, scrawled, or cut out ransom-style (consider using non-toxic ink ? nah)

  1. Preheat oven to 325?F.
  2. While the oven is heating, write out the fortunes. Be creative. Be clever. Be cruel. (And don?t forget that any well-written fortune will invariably benefit by adding the words "in bed" at the end.)
  3. In a large bowl, sift together the flour, ground almonds, sugar, and salt. Add oil and beat until smooth.
  4. Beat egg whites into the mixture. Add and beat in the orange rind and vanilla.
  5. Using a tablespoon, drop the mixture onto a well-greased cookie sheet. Leave 2 to 3 inches between each cookie.
  6. Carefully spread the batter out into thin, 3- to 4-inch rounds using the back of an oiled tablespoon.
  7. Bake for 10-12 minutes until very lightly golden around the edges, but not brown. Now you have to work fast ? and, unless your hands are impervious to heat, put on a pair of cotton gloves.
  8. Remove one hot cookie with a spatula and transfer to your gloved hand. Place a fortune in the center and fold the cookie in half away from you, but do not flatten it. Now grasp the pointed ends and bend them together toward you, leaving the seam on the outside.
  9. Nestle the warm cookies in muffin tins or ramekins to hold their shape while cooling.
  10. Your Fortune: Confucius says the man who serves fresh, warm cookies to his friends should never have to do dishes?in bed!
