" Christmas Carol, A" Scrooge's Turkey Legs with Crispy Gruel Stuffing

You will need:

For Scrooge's Turkey Legs:

  • 3 large onions, peeled and sliced in 1/2-inch rings
  • 1 Tbsp minced garlic
  • 4 Tbsp olive oil
  • 6 turkey drumsticks, on sale if possible
  • 1 set of chains, forged in life, to be worn eternally

For the Crispy Gruel Stuffing:

  • 1/4 cup vermouth
  • 1/2 cup golden raisins
  • 8 oz pork sausage
  • 1 onion, chopped
  • 1 cup chopped celery
  • 2 Granny Smith apples, peeled, cored, and chopped
  • 1 1/2 cups gruel (oatmeal)
  • 3 cups dried bread cubes
  • 1 cup walnut pieces
  • 1/2 cup chicken broth
  • 1 egg, beaten
  • 1 tsp ground sage
  • 1/4 cup fresh parsley, chopped
  • 1/2 tsp freshly ground black pepper
  • 2 oz (1/2 stick) melted butter

Directions:

1. Roast the legs: Preheat oven to 350?F. Brush the onion slices with a little olive oil and lay side by side in a shallow roasting pan. Combine the garlic with the remaining olive oil and rub onto the drumsticks. Season with salt and pepper.

2. Arrange the turkey legs over the onion slices and place pan in the lower third of the preheated oven. Roast for a total of 90 minutes. (The stuffing goes in the oven for the last 45 minutes of cooking.) Occasionally baste both the stuffing and the legs with any accumulated pan juices.

3. Make the stuffing:Preheat oven to 350?F. Put the golden raisins in a small saucepan, cover with vermouth and bring to a simmer. Remove from heat and set aside.

4. In a large skillet over medium heat, lightly brown the sausage, breaking it up as it cooks. Remove with a slotted spoon, transfer to a large mixing bowl and set aside.

5. Add the chopped onion and celery to the hot skillet and cook over medium heat until softened. Stir in the chopped apples and cook 15 minutes, stirring often.

6. Add the raisins and vermouth, increase the heat to high and cook until most of the liquid has evaporated. Scrape the hot mixture into the mixing bowl containing the sausage, stir together and cool to room temperature.

7. Fold in 1 cup oatmeal, 2 cups bread cubes, 1/2 cup walnuts, chicken broth, and the beaten egg. Season with sage, parsley, and black pepper and mix together well. Turn the mixture into a well-buttered shallow casserole or baking dish, sprinkle the remaining gruel, bread cubes, and walnuts evenly over the top and drizzle with melted butter.

8. On a single dinner plate, balance all six turkey legs atop the pile of now caramelized onions, surrounded by a ring of crispy gruel stuffing. Eat every bite yourself. Don your night cap, climb into bed, and see which shows up first: the ghost of Christmas Past or the pain of heartburn present. Yield: 4-6 servings (or 1 miser).
