" Money Pit, The" The Money Pit Fall Apart Pot Roast

Things may be falling apart, but at least you can still have a great meal.

You will need:

  • 1/3 cup cognac or brandy
  • 3 cups tomatoes, roughly chopped
  • 5 lbs top round, trimmed and tied
  • 3 cups dry red wine
  • 2 - 3 tsp kosher salt
  • 3 cups beef stock
  • 2 tsp black pepper, freshly ground
  • 6 ea parsley sprigs
  • 2 1/2 tbl all-purpose flour
  • 1 ea bay leaf
  • 3 tbl olive oil
  • 3 ea whole cloves
  • 2 cups each: roughly chopped onions,
  • 2 ea thyme sprigs, carrots, celery and leeks
  • 8 ea whole black peppercorns
  • 6 cloves garlic, crushed
  • 8 ea new potatoes, cut in half


1. Dry meat well, rub with the cognac and tie with butcher's twine.

2. Mix together the salt, black pepper and flour. Rub the mixture well into the roast.

3. In a dutch oven or large thick-bottomed saucepan, heat olive oil until almost smoking.

4. Place roast in pan and brown well on all sides.

5. Add the chopped vegetables, garlic and tomatoes and saute a few minutes.

6. Add the red wine and scrape the bottom of the pot to loosen any tasty brown bits.

7. Cook the red wine down by half and add all remaining ingredients except potatoes.

8. Bring to a simmer, cover tightly and cook at least 3 hours, turning the meat every half hour. Add the potatoes about 45 minutes before serving. NEVER LET THE ROAST COME TO A FULL BOIL!

9. Transfer the roast to a warm platter, surround with the potatoes and ladle the braising liquid over the top.
