" Ferris Bueller's Day Off" Can't Go to School, I Falafel

With the tasty Tahini sauce on top, this fried wheat dish is a true sensation. Make a batch of it for the next time you play "hookie" from school or work. It travels well!

You will need:

For the falafel mix:

  • 1/4 cup bulgur wheat
  • 2 cups canned garbanzo beans
  • 2 teaspoons cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon ground turmeric
  • 1/8 teaspoon cayenne
  • 1 tablespoon chopped garlic
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1/4 cup parsley
  • 1 piece pita bread, finely chopped
  • peanut oil, for frying

For the Tahini sauce:

  • 1 cup sesame paste
  • 1 cup water
  • 3 tablespoons lemon juice
  • 2 teaspoons
  • garlic salt to taste

Suggested garnishes:

  • Lettuce
  • Tomatoes
  • Pepperoncini
  • Radishes
  • Sprouts
  • More Pita bread
  • A note from your mom

Directions:

1. Cover the bulgur wheat with warm water and soak for 20 minutes.

2. Drain the soaked bulgur and combine with the garbanzos, cumin, coriander, turmeric, cayenne, garlic, and lemon juice in the work bowl of a food processor. Pulse 2 or 3 times, until well chopped but not pureed.

3. Transfer to a mixing bowl; stir in the parsley and chopped pita bread and refrigerate at least 20-30 minutes.

4. Combine the tahini sauce ingredients in a food processor and blend until smooth. Refrigerate until use.

5. Heat vegetable oil in a heavy saucepan or deep fryer until 350-360 F. Wet hands and shape the falafel mixture into small balls about the size of a small walnut.

6. Fry the balls, a few at a time, until crisp and golden, about 3 minutes. Serve immediately in a warmed pita pocket with tahini sauce and garnishes of choice.

7. When it's time to clean up, take the day off.
