Dinner & a Movie - Whoopi's Sole on Rice





" Corrina, Corrina" Whoopi's Sole on Rice

Whoopie sure does have sole! And now you can taste this succulent seafood dish, too. Don't worry, it isn't just good, it's good for you! Or maybe it's just good.

You will need:

For the rice:

  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • 1 small onion, chopped fine
  • 1/2 cup chopped celery
  • 1/2 cup chopped bell pepper
  • 1 bay leaf
  • 1 cinnamon stick
  • 1 cup long grain rice
  • 1 1/2 cups chicken broth
  • 1/2 cup chopped pecans

For the sauce:

  • 1/2 cup Florida orange juice, strained
  • 1/2 cup dry vermouth
  • 2 tablespoons minced shallots
  • a pinch or two cayenne pepper, depending on desired heat
  • 1/2 stick cold butter, cut into small pieces

For the sole:

  • 4 8-oz filets of sole
  • salt and pepper to taste
  • 1 cup flour
  • 2 teaspoons chili powder
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 1 copy "you go to my head" preferably by Louis Armstrong
  • 1 Mr. Potato Head

Directions:

1. Set the Scene: Dig through the garage for your old turntable (we know you didn't throw it away) and as many great jazz albums as you can find. (Ideally Ella, Oscar Peterson, Satchmo and Bill Evans)

2. Make the Rice: Preheat oven to 350F.

3. Melt the butter in a heavy saucepan over low heat. Add the salt, onion, celery, bell pepper, and bay leaf and cook until softened.

4. Add the rice, increase heat to medium and cook 3 minutes, stirring often.

5. Add the broth and bring to a full boil. Cover and bake in the preheated oven for 45 minutes, or until tender. Fold in the pecans and keep warm.

6. Make the sauce: In a small saucepan, over high heat, combine the orange juice, vermouth and shallots.

7. Boil until reduced to about 3 tablespoons. Remove from heat and whisk in butter, piece by piece, until sauce is thick and creamy. Season to taste with cayenne and salt as needed. Keep warm but do not let the sauce come to a boil after the butter has been added.

8. Cook the sole: Rinse the sole and dry well with paper towels. Season with salt and pepper.

9. Combine the flour and chili powder, dredge each filet in the flour mixture and shake off excess.

10. Combine the butter and oil in a large saute pan over medium-high heat. When butter stops foaming, saute for about 90 seconds on each side.

11. Serve: Serve the sole over a mound of rice. Top with orange butter and garnish with pecans.

12. Demand your Rights: Stack the dirty dishes in a pile, put on "Peace Peace" by Bill Evans and refuse to speak until someone gets the hint and offers to clean up (then touch your nose, and in a gesture of racial harmony offer Black and White Cheesecake with plenty of chocolate and vanilla sauce.)
