" Nothing in Common" Turkey and Chocolate Sauce

We know it sounds strange, but it is much better than you would imagine. Trust us, we wouldn't steer you wrong!

You will need:

  • 2 small white onion, chopped
  • 3 cups chicken stock
  • 4 dried Ancho, Guajillo or Poblano chiles
  • 2 ripe tomatoes, chopped
  • 6 Tbsp. vegetable oil
  • 1/4-cup sesame seeds
  • 1/4-cup sliced almonds
  • 2 each: whole cinnamon stick, whole cloves and whole allspice
  • 5 cloves garlic, chopped
  • 1 under-ripe banana (or plantain, if available), sliced
  • 1/2 cup golden raisins
  • 2 slices stale French bread
  • 1 ounce Mexican chocolate
  • 1 1/2 teaspoons chopped fresh oregano (or 1 Tbsp. dried oregano)

1. Place the turkey thighs and half of the onions in a large saucepan and cover with the stock. Bring to a boil. Reduce heat and simmer, covered, for 45 minutes.

2. Remove the stems and seeds from the chiles. (Reserve the seeds if desired for use another time.) Toast chiles lightly over a hot, dry griddle until they've softened and become dark and puffy. Cover chiles with hot water and soak for at least 10 minutes.

3. Transfer the tomatoes to a blender or food processor and blend; then add the soaked chiles and blend until smooth.

4. Heat 2 tbsp. of the vegetable oil in a saute pan over medium heat and toast the sesame seeds and almonds for about 30 seconds. Add the cinnamon stick, cloves, and allspice and continue cooking about 5 minutes. Transfer the contents of the pan to the blender and blend until smooth.

5. Heat 2 more tbsp. of oil in the pan and saute the garlic and remaining onion until light brown. Add the banana, raisins, and French bread and continue cooking until soft and fragrant, then transfer to the blender and process until smooth. If too thick, add a little of the chile soaking liquid as needed.

6. Heat the remaining oil in a large, heavy saucepan and stir in the blended mixture all at once. Grate in the Mexican chocolate; add the fresh (or dried) oregano and salt to taste.

7. Add the turkey thighs to the mole along with 1 or 2 cups of the broth, as desired, and simmer at least 10 minutes before serving.

8. Garnish with toasted sesame seeds and serve with steamed rice and hot tortillas, secure in the knowledge that this recipe has everything in common with a classic mole.
