Dinner & a Movie - Male Chauvinist Pig





" Nine To Five" Male Chauvinist Pig

We respect what you do, even if he doesn't. This week, turn the kitchen over to the resident chauvanist and let him prepare dinner for a change!

You will need:

Pork Roast

  • 1 two to three pound boneless center loin pork roast
  • 1 bay leaf, ground
  • 1/2 tsp clove
  • 1/2 tsp ground cinnamon
  • 2 tsp freshly ground black pepper
  • 3 tsp kosher salt
  • 2 sprigs rosemary
  • 4 cloves garlic, cut into slivers

Cabbage

  • 2 tbl butter
  • 1 yellow onion, thinly sliced
  • 6 cups red cabbage, shredded
  • 2 tbl cider vinegar
  • 2 tbl honey (if dieting, substitute Skinny & Sweet)
  • 4 tbl Italian parsley, chopped
  • 1 copy of "Men who hate too much and the women who have had enough"

Directions:

1. Adjust oven rack position to the upper middle of the oven and preheat to 475F.

2. Tie 'em up: Cut a length of twine about 5 times the length (or height) or the rascal you're about to lasso. Make a slip knot and drop it over the end that's not kicking. Continue by making a series of half hitches until you've used up your slack. (By this time he may have stopped struggling and will listen to reason...nah)

3. Season well: In a small bowl, combine the bay leaf, clove, cinnamon, pepper, salt and half of the rosemary. Massage spice mixture well into meat. If your chauvinist gets suspicious, tell him it's a new blend of Old Spice.

4. Stud the stud with garlic: Pierce the pork in 15-20 spots with a skewer and stud with the garlic slivers and a small piece of rosemary.

5. Roast 'em up: Place the roast on a rack in a roasting pan, slide the pan in the oven and set the timer for 30 minutes.

6. After 30 minutes, remove the roast from the oven and reduce the oven temperature to 325F. Allow the oven to cool before returning the meat, about 20 minutes.

7. Roast for a final 20 to 30 minutes, to an internal temperature of 150-155F. Let rest for 15 minutes before carving.

8. Braise the cabbage: Melt the butter in a medium saucepan over medium heat. Add the onions and saute until limp, about 3 minutes. Add the remaining ingredients cover, and cook for 15 to 20 minutes. Toss with chopped parsley just before serving.

9. Savor the moment: Now you've got your male chauvinist pig just the way you want him; tasteful, submissive and served on a bed of your choosing (in this case, cabbage).
