" Lord of the Rings: The Fellowship of the Ring" Hobbit Forming Rings

Join Claud as he shows Janet and Paul that all it takes are seven ingredients and a little decisiveness to make these crunchy "Hobbit Forming Rings."

  • 2 large onions, thinly sliced
  • 1 cup buttermilk
  • 2 cups all purpose flour
  • 1/2 cup rice flour
  • 2 teaspoons paprika
  • 1/4 teaspoon cayenne pepper
  • Canola oil (for frying)

1. Slice onion into 1/4-inch rings and combine with buttermilk in large bowl. Refrigerate 1-2 hours.

2. Combine and whisk together all-purpose flour, rice flour, paprika, and cayenne pepper in a second large bowl. (Another method is to simply toss the drained onion rings directly in cornstarch rather than the all purpose flour, rice flour and spices.)

3. Drain onions well and toss a large hand full with the flour mixture.

4. In a large, heavy skillet, heat 3 to 4 inches of canola oil to 360 degrees. Working in batches, shake excess flour off onions and cook in the hot oil until golden brown and very crispy, 2-3 minutes per batch. Transfer onions to paper towels and drain well. Season with salt and eat rapidly with dipping sauces of your choice!
