" Guess Who" Tutti Frutti Di Mare

Tutti Frutti Di Mare

  • 1 medium carrot
  • 1 celery stalk
  • 1 bay leaf
  • 2 tablespoon white wine vinegar
  • 1 tablespoon sea salt
  • 3 quarts water
  • 1 cup extra virgin olive oil
  • 4 tablespoons finely chopped Italian parsley
  • 1/3 cup fresh squeezed lemon juice
  • Salt, black pepper and red pepper flakes, to taste
  • 1 cup dry white wine
  • 3 to 4 pounds mixed seafood, i.e. peeled and cleaned shrimp, small calamari (cut into rings and bite sized pieces), scallops, scrubbed and de-bearded clams and mussels
  • Cooked and cleaned lump crab meat and lobster, if desired

Directions

1. Combine carrot, celery, bay leaf, vinegar, salt and water in a large saucepan and boil for 10 minutes. While the water boils, combine equal parts ice and cold water in a large mixing bowl to make an ice bath for chilling the seafood after it has cooked.

2. Combine olive oil, parsley and lemon juice in a medium bowl to make the lemon dressing. Season dressing to taste with salt, black pepper and red pepper flakes and set aside until needed.

3. Blanch shrimp, calamari and scallops in separate batches, plunging each in the ice bath after 90 seconds to 2 minutes of cooking time, depending on the size of the seafood.

4. Place clams and mussels in a saucepan over medium-high heat; add a cup of white wine, cover and steam, checking and removing them as they pop open. Discard any unopened bivalves.

5. Toss each type of prepared seafood with a few teaspoons of lemon dressing, pile on a serving platter and garnish with lemon halves.

Rialto Markets: The Pescheria, or fish market, is a short walk from the Rialto Bridge on the San Polo side of the Grand Canal. The current structure was built in 1917, but fish have been sold here for 600 years. It's one of several food markets in the area.

The true heart of the market are the fruit and vegetable sellers at the Campo de la Pescaria and around the Campo San Giacomo di Rialto and the 'Pescaria', the site of the fish market, between Campo delle Beccarie and the Canal Grande.
