" Bandits" On the Lamb Rack

In the mood for something exotic? How does lamb sound? Sure beats a cheeseburger and fries.


  • 1 1/4 cups extra virgin olive oil
  • 2 tablespoons chopped fresh garlic
  • 6 tablespoons fresh chopped herbs (i.e. rosemary, oregano, marjoram, thyme, sage or a mixture of your choosing)
  • 2 tablespoons chopped Kalamata olives
  • 2 lamb racks, frenched and trimmed (about 1-1/2 pounds each)
  • 1 cup fresh white bread crumbs
  • 1/4 cup chopped parsley
  • 1/3 cup chopped and toasted hazelnuts
  • 4 tablespoons whole grain mustard


  1. Combine one cup of the olive oil, half of the garlic, half of the herbs and the chopped olives in a large baking dish. Rub mixture on all sides of the racks, cover and refrigerate at least one hour and up to overnight. Remove lamb from marinade, blot dry and let sit 30 minutes before proceeding.

  2. In the work bowl of a food processor, combine breadcrumbs, remaining garlic, remaining chopped herbs, parsley, hazelnuts and salt to taste. Process 30 seconds; add 2 tablespoons of olive oil and pulse a few more times until the mixture is well mixed but still crumbly. Set aside.

  3. Preheat oven to 400F. Heat a large, heavy skillet over medium high heat for 2-3 minutes until quite hot. While the pan heats, season lamb racks with salt and pepper. Add 2 tablespoons of the olive oil and sear meat on all sides until evenly browned. Set racks aside to cool.

  4. Coat the meaty parts of the racks (not the bones) generously with whole grain mustard. Then, using your hands, press the seasoned breadcrumb mixture over the mustard.

  5. Place racks on a shallow roasting pan rounded side up and roast until an instant read thermometer inserted into the center registers 125F, about 20 minutes. Transfer to a warm platter, tent loosely with foil and rest 10 minutes. (While the lamb rests, the internal temperature will continue to rise to 130-135F for medium rare.)

  6. Serve with Dinner and a Movie’s, “Rapid Ratatouille” or a side dish of your choice.
