Sure, anyone can do shaved ice. But have you ever tried making your own gourmet flavored syrups from scratch?

Green syrup:
- 2 to 3 cups fresh mint leaves, chopped
- 1 cup cold water
- 1 1/2 cups sugar
- 1 tablespoon mint extract
- Green food coloring (optional)
Red and blue syrup:
- 1 cup water
- 1 1/2 cups sugar
- 2 cups fresh or frozen raspberries or blueberries
- 1/2 teaspoon vanilla extract
Yellow syrup:
- 1/2 cup water
- 1 1/2 cups sugar
- Zest of 1 lemon
- 1 1/2 cups fresh-squeezed lemon juice, separated
- Yellow food coloring (optional)
Green Syrup:
- Place chopped mint leaves in a saucepan and cover with cold water.
- Bring to a boil; immediately remove from heat and strain through a fine mesh sieve.
- Return mixture to the saucepan over medium-high heat; add the sugar and bring to a boil.
- As soon as the mixture begins to thicken, remove from heat and add the mint extract and the food coloring (if desired).
- Refrigerate until use.
Red and Blue Syrup:
- Combine the sugar and water in a heavy saucepan over medium-high heat. Boil the sugar and the water together for 15 to 20 minutes.
- Add choice of berries; return to a low boil and cook another 20 to 30 minutes or until the mixture starts to thicken.
- Use a strainer to separate the fruit from the liquid.
- Stir in the vanilla extract and refrigerate until use.
Yellow syrup:
- Combine the water, sugar, 3/4 cup of the lemon juice and lemon zest; bring to a boil and simmer 10 minutes.
- Add the remaining 3/4 cup lemon juice and the food coloring (if desired). Refrigerate until use.
Assembly Directions:
- Grind ice in food processor, ice crusher, or ice shaver.
- Scoop ice into paper cups and bathe in syrups of your choice.
